Double The Joy

GREEN TOFU CANAPES
(serves four)
Ingredients
1 box green tea silken tofu (available at supermarkets), cut into star shapes
4 slices raisin bread, cut into circles and toasted
1 tsp mayonnaise
8 stalks steamed asparagus
2 tbsp fish floss
Method
1. Spread some mayonnaise on a slice of raisin bread. Top with tofu, asparagus and fish floss.
2. Serve the canapes at room temperature or chilled.
WAGYU BEEF PATTIES
(serves four)
Ingredients
4 buns, halved
2 tsp olive oil
A pinch of salt and pepper
300g minced wagyu beef
Garnishing
1 small white onion, thinly sliced
40 stalks fine asparagus, grilled lightly
4 slices vine-ripened tomato
4 tsp mustard mayonnaise
Method
1. Mix the minced beef well, season and mould into small patties.
2. Heat up the oil in a non-stick pan (make sure the pan is on high heat), then fry the beef patties for 2 minutes each side. Set aside.
3. Lightly brush the bun with butter and toast it to golden brown.
4. Place half of the bun on a plate, then arrange the onion, patties, asparagus, mustard mayonnaise and tomatoes on it. Top with the other half of the bun.
