Good Bites

SAUTEED ANGEL HAIR PASTA WITH TOFU
Ingredients
1 cup cooked angel hair pasta
1 piece tofu, cubed
2 tsp olive oil
2 tsp minced garlic
Pinch of salt and pepper
Carrot sauce
1 small carrot, peeled and cut into bite-sized pieces
½ onion
½ cup vegetable stock
1 tsp unsalted butter
2g parsley
Beetroot sauce
80g fresh beetroot, thinly sliced
½ onion, sliced
1 cup vegetable stock
1 tsp honey
1 tsp unsalted butter
Method
1. Lightly fry the tofu and scoop out the centre.
2. Put the ingredients for the carrot sauce into a small pot. Bring it to a boil, then simmer for 10 minutes or until it’s reduced. Pour the mix into a blender and puree until fine.
3. Repeat the same process with the beetroot sauce.
4. Heat the olive oil in a non-stick pan and fry the garlic until fragrant. Season to taste.
5. Arrange the pasta onto the tofu. Serve with the sauces.
