A Slice of Heaven
PULLED PORK MANTOU (Serves 4)
Ingredients
150g pork loin 1 small white onion, thinly sliced
1 tbsp butter
1 cup apple juice 2 cups of water 7 to 9 prunes, pitted
2 tsp unsalted butter 4 plain mantou
½ cup carrot, cut into strips and blanched
Method
1. Warm a pot on medium heat. Add butter and fry the onion to soften.
2. Add in the rest of the ingredients and let them simmer for 35 to 45 minutes, until the meat pulls apart easily with a fork.
3. Allow the meat to cool and cut it into thin strips as shown. Reserve the gravy.
4. Cut an opening in the mantou, and lightly toast it in a toaster or an oven.
5. Stuff the carrot strips (or you can use alfalfa sprouts) and shredded meat into the mantou.
6. Drizzle a bit of the gravy over the filling once the mantou is filled.
