If the mere mention of desserts like chendol, sago gula melaka and ondeh ondeh make you and your kids drool, it’s probably because of the rich and sometimes smoky sweetness of gula melaka.
Gula melaka, or liquidised coconut palm sugar, has been used for years in Singaporean cuisine. This unrefined sweetener provides a caramel-like richness in desserts.
Modern chefs know gula melaka is a substitute for everything from maple syrup to brown sugar, while foodies with a sweet tooth know its flavour is very particular to Peranakan cuisine.
Here’s where to hit for a quick gula melaka fix.
