DOUBLE-BOILED HASHIMA WITH RED DATES
This recipe makes two servings.
10g white fungus
8 dried longans
6 red dates, seeds removed
2 pandan leaves, tied in a knot
60g raw sugar to taste
1. Wash, clean and soak hashima in water for 3½ hours.
2. Soak white fungus in water for an hour until it becomes soft. Drain and tear fungus into small pieces.
3. Place all ingredients, except raw sugar, in a double boiler. Simmer over low heat for 1½ hours.
4. Add raw sugar and stir until dissolved. Remove pandan leaves. Serve immediately.
NUTRITION FACTS YOU SHOULD KNOW
In traditional Chinese medicine, it’s believed that the pairing of hashima with white fungus helps nourish the kidney yin, improve general well-being and promote good sleep. Hashima is also said to have anti-ageing benefits.
